The Americas (Pt. 1)
American Wine Pioneers is on California’s hidden goldmine, The Sierra Foothills. Patrick will focus on three wineries: Clos Saron, La Clarine Farms and Caleb Leisure. The Sierra Foothills hold some of Cali’s oldest vineyards, especially old vines of Zinfandel, Syrah and Grenache, as well as America’s highest altitude appellations. Along with the producers mentioned, feel free to drink any wines from the Sierra foothills, or any California Zins, Syrahs, Grenaches, or Petite Sirah.
Food Pairing:
Corn Meal Griddle Cakes (gf) w/ Red Wine Braised Red & Black Beans, Lettuce, Herbs , Onion, Yogurt (or Sour Cream), Cheese, Chilis (if desired)
For the Griddle Cakes:
2 ea eggs (separated)
56 g butter (melted) =2
50 g dark brown sugar
50 g cream
200 g milk
25g dry white wine
8 g baking powder
105 g finely ground cornmeal
200 g coarse-ground cornmeal (polenta)
10 g salt
2 g MSG
Whip egg whites to stiff peaks
Mix dry ingredients together
Mix egg yolks, brown sugar, milk, cream, and white wine
Add dry to wet, whisk
Add melted butter, whisk
Add whipped egg whites and fold
Oil 12” pan and place over high-medium heat
Add batter once hot, about 2 tablespoons at a time
Once seared on one side, flip
Cook until cooked through
For the beans:
Spice mix:
5 g coriander
4 g mustard seed
3 g sesame seed
10 g cumin
-
6 g sumac powder
3 g chili pepper (dried and ground- cayenne or any other ground chili will work)
Beans soaked to cook:
1 cup each soaked in two cups water each, to bloom to 1 qt (4 cups) total. Add additional cup of water to cook in
Cook in water until tender and creamy
1 cup red wine
50 g onion (small dice/ mince)
30 g garlic (chopped finely)
2 cup water
In a separate pan:
sauté onions and garlic
Deglaze with red wine and water
Add cooked beans
Cover and cook for 30 minutes, or until most liquid is absorbed
Season with salt to taste
To finish:
Torn tender(ish) lettuces
Julienne raw onion
Micro plane cheese (hard or queso blanco-fresco-cotija-parmesan)
Sour cream or thick yogurt
Lime (sliced as if for a cocktail)
A dollop of yogurt or cream
Lettuce
Bean mix
Red onion
Grated cheese
Shaved jalapeño if you are into it
