Austrian Wine & the Rebirth of Cool

Drink: Patrick recommends all Austrian wine. Gruner or Riesling are classics, but don’t be afraid to experiment with any of the whites. With reds, chilled, lighter and fresher are ideal. Don’t worry - that’s what Austria specializes in.

Food Pairing: Schnitzel!  Here’s a pork schnitzel recipe from the NYT or you can try making this fish version from our very own, Steven Shockley!

Skate Schnitzel with Roasted Potatoes and Sauce Grenobloise. *For a vegetarian version: eggplant given a salting and herb/spice rub down or a spaghetti squash “steak”.

For the Fish:

  • Dust in flour, corn starch, or rice flour

  • Dip in buttermilk

  • Dip in panko (press down firmly to ensure that entire surface is covered in panko)

  • Sear in neutral oil (canola or grapeseed) 

  • Once the first side starts to brown flip over / add 1 oz butter and baste until both sides are a Carmel brown 

  • Remove with a slotted spatula and let rest on a paper towel

For the Potatoes:

  • Take steamed or boiled petite red or yellow potatoes and smash them.

  • Fry in residual oil until crispy on the outside.

  • Remove from pan and season with salt and pepper. 

For the Sauce:

  • In a separate pan add two tablespoons of capers until they start to pop

  • Add one cup of white wine and juice of one lemon (zest micro planed and reserved ahead of time) 

  • Remove from heat once the pan is almost dry

  • Add 2 oz of butter and whisk until sauce comes together and pour over fish (should be enough for two portions)

Garnish with shaved red onions and torn parsley.
